At Albacara we believe in the value of food, a source of life and health, and we invest in natural production processes that preserve all the nutritional characteristics of our products, working with practically zero impact and in perfect man-nature balance.
For years we have been promoting knowledge of the precious raw organic goat’s milk and its derivatives by producing goat’s cheeses which are the maximum expression of quality from every point of view
We are young entrepreneurs with a long family tradition in agriculture behind us. The company is located in the heart of the Iblei Mountains and extends for over 70 hectares between the Albacara and Carbonaro districts, between the provinces of Ragusa and Syracuse.
In Albacara, in addition to cheese, we produce durum wheat obtained from ancient varieties that have not undergone genetic improvements such as Russello, Tumminia, from which we obtain flour and pasta. We also produce extra virgin olive oil obtained from the very tasty and valuable Tonda Iblea cultivar. The olives are harvested as they once were by hand and taken immediately to the company’s oil mill where the oil is extracted completely cold with a continuous cycle system. On the farm we also raise chickens, turkeys and other farm animals.
